I've baked and fried with a lot of different almond flours, but my favourite for making a keto dish is Anita's Organic. If you are looking for the best vegan almond flour, this is the one. Anita's is made from organic almonds, and I find that when I fry with it, it's light and crisps up perfectly. Recently I made a keto chicken parm recipe using it, and it was so easy to work with.

This was a really easy dish to make, just beat some eggs, press the chicken breasts (cut into thin cutlets) firmly in the Anita's Organic Almond Flour, which I've used instead of the traditional breadcrumbs. I like a lot of Italian seasoning, garlic and parmesan, but you can really add whatever spices you like.

After you've fried the cutlets, put them into a baking pan, cover with tomato sauce and cheese, and bake at 350. I add tons of basil after and it's just delicious.

The best price I've see for Anita's Almond Flour is online at House of Wellness. It's a made in Canada product from a Canadian company which offers a huge selection of products for those cooking for gluten-free diets. Enjoy! Rosie :)
